Washed
Washed process, also called wet process, means that the fruit is removed from the coffee bean before drying. The beans are usually fermented in water tanks to remove the remaining mucilage, then washed and dried.
Washed coffees are usually cleaner, brighter, and more elegant in taste. They often show more clarity, fresh acidity, floral notes, citrus, stone fruit, or tea-like characteristics. This process is ideal for highlighting the true character of the origin, variety, and terroir.
