Honey

Honey process is somewhere between natural and washed processing. The skin of the coffee cherry is removed, but part of the sticky mucilage remains on the bean during drying. This mucilage looks slightly like honey, which is where the name comes from — no actual honey is used.
Honey processed coffees often combine the sweetness and body of natural coffees with the clarity of washed coffees. They can taste sweet, round, smooth, fruity, and balanced. Depending on how much mucilage is left on the bean, honey process can be described as white, yellow, red, or black honey.
