Coffee Processing Methods

After harvest, coffee must be processed to remove the fruit layers surrounding the seed and reduce moisture to a stable level. Decisions made during fermentation, washing and drying can influence the coffee’s aroma, sweetness, acidity, texture and overall expression.
Processing is only one part of the final cup. Variety, origin, harvest ripeness, climate, drying conditions, storage and roasting also play important roles.
THE FOUNDATIONS OF COFFEE PROCESSING
Natural Process
The coffee cherries are dried with the fruit intact before the dried outer layers are removed. Results vary according to variety, climate, fermentation and drying control, but natural coffees can show pronounced sweetness and fruit character.
SHOP NATURAL COFFEEWashed Process
The skin and pulp are removed, the remaining mucilage is broken down and washed away, and the coffee is then dried. Washed processing is commonly selected to highlight clarity, structure and the characteristics of the origin.

The outer skin is removed while part of the fruit mucilage remains on the coffee during drying. The amount retained and the drying approach can create a spectrum between washed-style clarity and natural-style fruit expression.

Anaerobic Fermentation
Fermentation takes place in sealed or reduced-oxygen conditions. Time, temperature, microbial activity and whether the coffee is processed as whole cherry or depulped coffee can create significantly different results.
SHOP ANAEROBIC COFFEECarbonic Maceration
Whole coffee cherries are placed in a carbon-dioxide-rich environment. Inspired by winemaking, the method is used to manage fermentation around and within the fruit, although exact protocols vary between producers.

Some producers ferment coffee with selected fruits, spices, yeasts or other ingredients, while others introduce flavor at another processing stage. Because terminology and techniques vary, each coffee should be evaluated using its specific producer information.

Processing conditions are managed to encourage lactic acid bacteria during fermentation. It is a controlled fermentation approach rather than one fixed recipe, and the result depends on the complete production protocol.
PROCESSING IS PART OF A BIGGER STORY
Processing method alone does not define the quality or exact flavor of a coffee. Variety, terroir, cherry ripeness, fermentation control, drying, storage and roast development work together to shape the final cup.
