Rinse the paper filter, discard the rinse water and add the ground coffee. Start the timer with the first pour.
0:00 — pour 100 g of water.
1:00 — add 100 g (200 g total).
2:00 — add 100 g (300 g total).
Let the water drain through. Target total brew time: 2:45–3:00, from the first pour to the end of drawdown.
Use this as a starting recipe. If thin and sharply sour, grind 1–2 clicks finer. If bitter, dry or astringent, grind 1–2 clicks coarser. Adjust one variable at a time, guided by taste.
